pumpkin cookies
Does anyone know a good recipe for pumpkin cookies?I like to use the fresh pumpkin from my jack o lanterns

I googled pumpkin cookie recipes and found a gazillion recipes for pumpkin! Some of them sound totally awesome. Hve fun!!!

Pumpkin muffins
Hello,
Ok so they're not cookies...I use pumpkin in my banana bread recipe and make muffins instead of a loaf. The only substitutions I make are pumpkin instead of banana and then of couse the cloves and cinnamon to taste. Everyone really seems to like these and they are fairly easy.

Umkay. This is so easy it's not even funny.
1 box Spice Cake mix
1 12 oz can pumpkin
1 cup chocolate chips (or instead, you can use 1 cup of raisins if you wanna go that route, and chocolate is not a priority in your life -s-)
Take one spice cake mix, toss it in a bowl. Add one can (1 cup) packed pumpkin to it, slowly, in 1/4 cup increments. (In your case, cook your pumpkin till it's mush, and add it). The constitution of mix and pumpkin we're looking for is like cookie dough, sorta stiff. It may take all your pumpkin. It may not, depending on how thick the pumpkin is. Once that is obtained, add in a cup of chocolate chips. Stir in.
That's it.
Just spoon a cookie sized dollop on a cookie sheet, and bake at 350 degrees (about 6-8 minutes) until soft and done. They won't brown. The consistency is cakey-cookie like. I top these with a drizzle of a 1/4 cup powdered sugar mixed with a dash of milk (so it forms a runny icing).
