Wassail!
I belong to a group called the RDPC Chamber Choir and for the first time ever, we are hosting a Madrigal Dinner. Its like dinner & a show from the 1500's.
A few days ago, we had the taste test with our caterer and got to taste all the dishes that were going to be served. Because this is a medieval sort of thing going on, we were provided with a deliciously festive "Wassail" to go along with the meal. The chefs were more than happy to oblige me with the recipe, and its just so good, I thought I'd share it with all of you!
Wassail
You will need:
1 medium can apricot halves (undrained)
4 cups unsweetened pineapple juice
2 cups apple cider (or apple juice, either will work)
1 cup orange juice
18 whole cloves
5 cinnammon sticks, broken
Additional spices can be added to your own taste
Directions:
1) In a blender or food processor, blend peaches and peach syrup-stuff until liquid.
2) Pour into a large saucepan
3) Add pineapple juice, apple cider/juice and orange juice
4) Place cloves and cinnammon sticks in a double-thick cheesecloth bag and add to saucepan.
ALTERNATIVE: Add cloves and cinnammon directly to saucepan, but drain the liquid through a fine mesh strainer before serving.
5) Bring the liquid to a boil
6) Reduce the heat to medium-low, cover, and let simmer for 15-20 minutes.
7) Serve hot; garnish with cinnammon sticks if desired.

Obviously, there is no problem to post your or your family's own recipes in this forum but since you say this is a chef's recipe, I have a problem with it being here. Â*Did you get permission to post it?
Although it was given to you in particular, the chef may not want this recipe in out in general usage. Â*There may also possibly be copyright issues. Â*Does that make sense?

I was given permission to use it; I made sure to double check with the head chef before I posted it. Everything that you're saying makes perfect sense, and I apologize for not stating in my above post that I had permission from the head chef and creator of the recipe to share it.

......My Wassail has Wine (add after removing from heat) ....., it has been known to have a bit of Hard Cider. One year, someone splashed a bit o Rum into the mix !

I got to thinking after I posted and I was afraid I was being a bit of a Soup (Wassail?) Nazi and well, a bit silly too. Thanks for understanding and not telling me exactly where I could stick my 'problem.' [smile]

lol, wassail is a christmas drink from medieval times. Its sort of like mulled wine, but a bit sweeter and with a little less spice.Azra wrote:

I'm always super-duper careful when it comes to copywriting and permissions. I had somebody steal my final paper for English last yeat and hand it in under her own name to her own teacher, claiming that she'd written it. Luckily, that specific teacher knew she was lying through her teeth and I got my paper back in time to hand it in and still get full marks.

Thanks for posting the recipe Era, I made some today and it was excellent. I will definitly have to give this recipe to my friends.

I agree with Althaea, on top of that try having him relax and meditate before bed. If it helps have him keep a journal near by and record the instances as best as he can. But, definitely go through a...
