FREYA YULE LOG CONSTRUCTION
Remove the thin flat cake (cocoa genoise) from the pan and leave the foil/paper. Cut off the crust edges in straight lines.
Make a small batch of Amaretto syrup (sugar, water and Ameretto) and paint over surface of cake.
Spread the filling over the entire length of the cake, but not on one of the long edges (about 1 1/2 inches leave uncovered from one edge).
Use the paper to help roll it up. Keep the paper on and refrigerate for about an hour.
Get a serving tray out for the log, something that can fit the entire log.
Remove from fridge and remove paper and place on serving tray.
Cut either end to make neat.
Use the ganache as a spread to create bark on the log.
Decorate the ganache with holly, berries and merignue mushrooms. THe mushrooms will melt in the moisture of the cake so it is better to place these on last minute. You can also use a little ganache to attach extra mushrooms to the serving plate.

i make my pie crust the same way with one exception.... i use orange juice instead of water. try it sometime. i think you might like it.

My family always serves saurkraut at the traditional turkey feast. Here's how I make it, give it a try even if you don't usually like saurkraut because it's very different than just heating up a can.
One bag of Silverfloss kraut, thoroughly rinsed and drained, if you can get it, you can use canned too but you should rinse it twice.
Add a small amount of water, maybe 1/2 cup to rinsed drained kraut in pan.
Add 1 teaspoon caraway or celery seed
Add 1/4 cup brown sugar, less if you don't like it too sweet, honey works too!
Simmmer for around 20 minutes.
This side is awesome with turkey or pork, it would complement JB's roast perfectly.
What ethnic or cultrural twist does your family include in the turkey day feast?

yaaaay!!! Thanks so much for sharing all your recipes...this is great. I will be a busy bee tomorrow. We live here in Vermont and have quite a bit os snow already....it's absolutley gorgeous outside right now. We are making a bonfire tomorrow night and having our own little ceremony with the girls....they love this time of year.
